winter immune booster recipe

(sugar free, dairy free, egg free, gluten free)

When I popped one of these bad boys into my mouth it was like my childhood burst back into existence! Memory lane anyone?

Totally easy... the hardest thing is not eating them all at once!


35g coconut toasted

70g coconut butter

3 tsp cacao

3 tsp maple syrup

40g coconut oil (warmed if it's solid)

pinch of salt

Toast your coconut either in a pan on medium heat stirring until it's just the way you like it, or on a tray in the oven at 180º for a few minutes. My suggestion is that you stand in front of the oven and don't move until it's done... otherwise you'll end up with coconut that more closely resembles saw dust. Good luck.

Put all of the ingredients except the toasted coconut into a food processor and whiz together. Then mix in the coconut with a spoon. Form into balls and refrigerate.

And don't be too hard on yourself if you keep going back for more... it's whole food after all!
