Banana Bread with Dates

(sugar free, dairy free, gluten free)

Based on a recipe from one of my favourite cook books 'My Darling Lemon Thyme' by Emma Galloway. I've made a couple of little changes to suit my own tastes... This is deliciously moist, totally moorish, and possibly the easiest thing ever to make!

Ingredients:

140g pitted dates, finely chopped

1 tsp baking soda

1 1/2 cups mashed overripe banana

1/2 cup extra virgin olive oil

2 eggs

1/4 tsp vanilla extract

210g fine brown rice flour

80g tapioca flour (or potato flour)

2 tsp baking powder

1/4 tsp salt

Preheat the oven to 180ºc and line a loaf tin with baking paper. Mix the chopped dates with the baking soda and 2 Tbs boiling water. Leave to soak for a few minutes. Put all of the ingredients (including the date mixture) into a mixing bowl and combine.

Pour into the tin and bake for around 1 hr. Make sure you do the skewer test to see if it's done. Then... dig in! Even though this is dairy free, my favourite way of eating it is with butter. I know.... outrageous!
