(sugar free, dairy free, egg free)
I'm a huge fan of a giant smoothie for breakfast, but when the mornings are cool like today, I need something to keep me warm, and this is just perfect! I've got a jar of the toasted muesli waiting to go and all I have to do is poach some fruit and I'm in heaven! You can use whatever you've got in the fruit bowl, but here's what I used today:
Poached Fruit Ingredients:
Cut all the fruit up however you like it and put them in a pan with about 1 Tbs water and 3 cloves.
And with the cloves, remember... count them in, and count them out. You don't want to end up crunching on one, but the subtle flavour they bring is amazing! Put the lid on and poach the fruit for about 10 mins or until it's cooked the way you like it.
Put it in a bowl and sprinkle with toasted muesli, then find your most comfortable chair and sink back into it to enjoy!
Again you can make this using whatever goodies you have in your cupboard. But here's what I put in mine (roughly).
4 cups rolled oats (you can use quinoa flakes if you need it to be gluten free)
2 cups desiccated coconut
1/2 cup macadamias roughly chopped
1/2 cup almonds roughly chopped
1/2 cup pumpkin seeds
1/2 cup sunflower seeds
1/4 cup sesame seeds
1/4 cup coconut oil
1 Tbs honey or maple syrup
1/2 tsp salt
1 cup of currants, sultanas or whatever dried fruit you like
Mix all of the seeds, nuts and oats together in a large bowl.
Mix oil, honey and salt together and pour over the muesli mix.
Line a baking tray with baking paper and spread the coated muesli out.
Bake in the oven at 180 degrees for about 15 mins making sure you turn it over very 5 minutes. My advice is to set a timer... This will toast faster than you think!
Once it's toasted to your liking, let it cool down and then add the dried fruit and put it in an airtight container to use as a crumble topper, smoothie topper or whatever else you can think of... ours has even been used as a pizza topper!
