Choc Berry Slice

choc berry slice recipe

(sugar free, dairy free, egg free, gluten free)

This new creation had my daughter's eyes popping out of her head. Her whole face lit up with pure delight and was quickly covered in chocolate berry fun. And she's right... this slice is incredible! And super easy to make.. All you need is a food processor or a high powered blender and this slice of berry heaven is yours!!!

Base layer:

100g dates

50g desiccated coconut

20g almond meal

1 Tbs coconut oil

Put all of the ingredients in a food processor and blitz until it's a fine crumb. Line a loaf tin with baking paper and pour the base crumb into it, flattening it down. Put the base into the fridge.

Berry layer:

60g coconut butter

60g cashew butter

2 Tbs water

150g berries (I used a mix of frozen raspberries and blueberries, defrosted)

50g coconut oil

2 Tbs maple syrup

Put all of the ingredients into the food processor and blitz until smooth (make sure your berries aren't still cold otherwise it will start to set the mixture while you're mixing). Pour the berry mix onto the base layer and return to the fridge to set.

Choc layer:

2 Tbs coconut oil (if your oil is solid, heat it gently until it's liquid)

1 Tbs cacao

1 Tbs maple syrup

Mix all of the ingredients together in a bowl, making sure all of the lumps are out. When the berry layer is solid enough, pour the choc layer on top and return to the fridge. Allow the slice to set for 30 mins - 1 hr before cutting.

Go crazy with this slice of berry magic!
