This is the perfect picnic food. They are easy to make, you can eat them with your fingers, they taste great cold, and they are packed with healthy veggies!
1 Tbs flaxseed meal
75g chickpea flour
35 g tapioca flour
2 tsp baking powder
1 tsp salt
2 spring onions chopped
2 cups of grated sweet potato (or a mix with grated carrot)
1 cup of green peas (if they’re frozen, plunge in hot water before using
Coconut oil for cooking
Mix the flaxseed meal and water together and leave to sit for about a minute.
Then add all of the flours and mix together.
Add the spring onions and sweet potato and mix.
Fry spoonfuls in a medium pan with a little coconut oil.
It’s that easy!
