This is a saviour on those days when I realise we have nothing to eat! I can pretty much guarantee that no matter how unprepared I am for lunch there will always be a tin of chickpeas in the cupboard. And the fact that my 3 year old daughter LOVES dipping carrot sticks in it is a total bonus!
1 tin chickpeas (unsalted)
1 Tbs tahini
1 garlic clove
1 Tbs lemon juice
2 Tbs water
1/2 tsp salt
Put all of the ingredients into a food processor and process until smooth.
Check the level of salt and lemon and adjust if you like.
Then spoon it into a bowl and I normally sprinkle with sweet paprika, sesame seeds and olive oil.
